Zucchini Wrapped Salmon
- 1 salmon fillet cut up into chunks
- zucchini sliced semi-thin
- olive oil
- coarse salt and fresh-cracked pepper (to taste)
Simply cut the zucchini thin enough to wrap around the salmon, but not so thin it will fall apart over the fire. Pre-cook the zucchini just enough that it’s easy to wrap around the salmon without breaking. Then wrap it up, and cook it until delicious!
