Grilled Ham & Cheese Pull-Apart Sandwich Loaf

This is such a simple way to grill up some lunch in between dips in the lake.  You just slice up a loaf of Italian bread, add butter, mustard, sandwich ham, and swiss cheese, then wrap in foil and heat up on the grill until the cheese melts and that’s it.  Simple and delicious!  It doesn’t get any better than that.

Zucchini Wrapped Salmon

Ingredients

  • 1 salmon fillet cut up into chunks
  • zucchini sliced semi-thin
  • olive oil
  • coarse salt and fresh-cracked pepper (to taste)

Simply cut the zucchini thin enough to wrap around the salmon, but not so thin it will fall apart over the fire.  Pre-cook the zucchini just enough that it’s easy to wrap around the salmon without breaking.  Then wrap it up, and cook it until delicious!

Mini Sandwiches

Ingredients:

  • Bread
  • toppings of your choice

Just assemble the sandwich on the stick, and toast away until yummy!

Camping Recipes… on a stick!

Everybody knows that you can cook hot dogs and marshmallows on a stick over a fire… but there is so much more than that!

Grilled Pesto Chicken Kabob

Ingredients

  • 1 cup fresh basil leaves, chopped
  • 1 clove garlic
  • 1/4 cup grated Parmigiano Reggiano
  • kosher salt and fresh pepper to taste
  • 3 tbsp olive oil
  • 1-1/4 lbs skinless chicken breast, cut into 1-inch cubes
  • 24 cherry tomatoes
  • 16 wooden skewers

You make the pesto, and marinate the raw chicken in it for a couple of hours.  Then just alternate the marinated chicken and tomatoes on a skewer and roast on the grill or over a fire.

Hawaiian Kabobs

Ingredients:

  • 1 lb ham slices (you can even use lunchmeat)
  • I can pineapple chunks
  • 8 oz teriyaki sauce
  • skewers

Marinate the ham in teriyaki sauce, then alternate ham and pineapples on the skewers and cook until warmed up.

Campfire Cones

This is sooooo good and so easy to make!

Ingredients

  • Sugar Cones
  • Peanut Butter
  • Mini Marshmallows
  • Chocolate Chips
  • Bananas
  • Aluminum Foil (to wrap them in)

You just spread some peanut butter around the inside of the cone, then drop in the marshmallows, chocolates and banana pieces, and then wrap it all in foil and back until melty and delicious.

Bananas… chocolate… peanut butter… coconut… yum!

Everything you will need:

  • Bananas (As many as you need. Estimate 1 per person. Once they taste it, no one will want to share.)
  • Chocolate chips, butterscotch, peanut butter chips, mini marshmallows, sweetened coconut (or whatever other toppings you fancy)
  • Foil

You slice the bananas, stuff with your yummy toppings, wrap in foil, and grill.

So far, we’ve look at Breakfast and Lunch recipes that you can make around a campfire, so this time, let’s round out the day with some amazing dinner recipes.

 Potato Boat Dinner with Ham, Cheese & Bacon

This simple twist on a campfire baked potato turns a single spud into a complete meal that’s delicious and filling.

Ingredients

  • Large potatoes, baked
  • Sliced ham
  • Cooked bacon slices
  • cheese slices {we like marble}
  • Sour cream for topping
  • Green Onion for topping

You simply cut slices in the baked potato, and stuff cheese, bacon, and ham into the slices.  Then you wrap it all up in foil and bake until done – about 20+ minutes until done.

Grilled Cheesy Ham Supper Packs

Cheese AND Ham… it doesn’t get much better than that.

Everything you will need:

  • slice cooked ham, 1/2 inch thick (about 1 lb), cut into 4 equal pieces
  • cups refrigerated new potato wedges (from 1 lb 4-oz package)
    boxes (10 oz each) Green Giant™ frozen broccoli, cauliflower, carrots & cheese flavored sauce, thawed
    cup shredded Cheddar cheese (4 oz)

You just put a slice of ham in a foil pack, top with potato wedges and veggies, wrap up in tinfoil, and back until warmed through and cheese is melted.

Fun Campfire Lunch Recipes

Last time we talked about some Creative Campfire Breakfast Recipes, so this time I wanted to keep the meal day going with some fun lunch recipes that you can cook with your family and friends around a mid-day campfire at the lake.

Campfire Crescent Dogs

This simple twist on a campfire hot dog makes for an easy and fun lunch.

Ingredients

  • 1 tube Pillsbury™ refrigerated crescent rolls
  • Ketchup and mustard, as desired
  • 8 hot dogs

Wrap your hot dog in a triangle of the crescent roll dough.  Hold it over the fire, and steadily turn it so that it cooks evenly.  It should turn a nice, golden brown pretty quickly, so you want to keep it off of direct flame so your hot dog inside will get warmed up.

When they’re done, let them cool down a bit before you take them off the stick.  Garnish with ketchup, mustard, or any other topping you want and enjoy!

Everything you will need:

  • Onions
  • Your favorite meatloaf recipe ingredients
  • Tinfoil
  • A hot fire

Mix up your meatloaf like you normally would.  Put it inside some hollowed out onions.  Wrap them up in tinfoil.

To cook them up just toss them down into the fire! These normally take about 10-20 minutes to cook. Just keep turning them over in the fire every 10 minutes or so until the meatloaf is cooked through.

Once cooked, remove and enjoy!

Ingredients

Campfire Muffins

These no-mess muffins are a great way to make breakfast and have your orange juice to go with it!

Everything you will need:

  • Several oranges (one orange makes 2 muffins)
  • Muffin mix (any flavor will work)
  • Campfire or Grill
  • Aluminum Foil

Next, mix up your muffin mix as you normally would.

Now scoop the mix into the orange halves to the top and wrap into a ball shape with 3 layers of foil.

To cook them up just toss them down into the fire! These normally take about 10 minutes to cook. Just keep turning them over in the fire every minute or so and check them until they get firm in the middle.

You may need a spoon to get all of them from the peel.

Once cooked, remove and enjoy!
